Recipe: Breakfast Casserole Muffins

Eating breakfast is one of my biggest struggles in the morning. This is usually because (1) I don't have as big of an appetite in the morning as I do throughout the rest of the day, and (2) because I am way too lazy to take the time to make something healthy and good for me. One of the ways I find helps combat skipping breakfast is making my meals Sunday night and putting them into the fridge or freezer and just heating them up them up in the morning before I leave for school or work.


One of my favourite recipes to make for breakfast are my Breakfast Casserole Muffins. They are so easy to make and delicious to eat!

This recipe will make 12 Breakfast Casserole Muffins:


Hash or 6 pre-made & pre-cooked hash browns
6 eggs 
Meat of Choice (Ham, Bacon, etc)
Grated Cheese of Choice (I used marble cheese)
Green Onion
Medium Sized Muffin Trade (12 muffins)
Salt and Pepper to Taste

  1. Pre-head your oven to 350 degrees Fahrenheit. 
  2. Grease your muffin tin (you can use Pam Spray, but I prefer normal butter to add some flavour)
  3. Fill the bottom of each muffin tin with your hash. If you are using pre-made, pre-cooked hash browns from your local grocery store's frozen isle, cut each hash brown in half, break the hash brown into small pieces and fill the bottom of the tin with that. 
  4. Cover each hash brown with half of an egg, scrambled, and add salt and pepper to taste. 
  5. Sprinkle your grated cheese, ham, and green onion on top of your eggs and hash browns. 
  6. Cook in the oven for 15 - 20 minutes (I cooked them exactly 17 minutes). 
  7. Enjoy your lovely breakfast!
This recipe is easily customized and you could add so many other things like cut veggies or different kinds of meat. The choices are limitless. I hope you enjoy this recipe as much as I do! If you do try this recipe at home, please do let me know how you liked them!
